Breakfast Recipes

The holiday season is upon us and after many filling lunches and dinners with tonnes of leftovers to hold us over for days, it would be nice to have a tasty breakfast during the season especially if we had one too many cups of eggnog. This was something I came up with one morning while laying in bed wondering what would be on the menu for breakfast. This tasty dish is loaded with foods to get us fueled for the day and is filling in its own sense and does not require anything additional sides to accompany it. The key to this recipe is the base and you must use a Bavarin style bread, Rudolph’s is my go to multi grain bread as the size of the loaf is perfect for this meal as well as light breakfasts. Shredded mozzarella gives it a mild taste but if you prefer something more sharp or intense flavour you can go with strong cheddar or gorgonzola. A natural butter spread is preferred over margarine and make sure to use a large skillet. Top with sunny side eggs to give it that island look.
