Super fast and easy chicken and rice

 This is a riff on the old pork chops with mushroom soup. It goes together in less than 10 minutes and cooks in about 40 minutes. 

Serves 2-3

2 tbl butter

1 tbl olive oil

4 skinless, boneless chicken thighs (bone in would be fine too)

Salt, pepper, garlic powder 

1 onion, sliced

3/4 Cup rice

1/2 cup white wine

1 can cream of chicken soup

1/2 cup sour cream 

3/4 cup sharp cheddar cheese, shredded 

Melt butter and oil in an ovenproof pan that has a lid. Season the chicken with salt, pepper, and garlic powder.  Brown chicken on all sides. Remove the chicken. Add the onion and saute till soft. Add the rice and sauté a few minutes. Deglaze the pan with white wine and water. Add the soup and sour cream, and cheese. Stir to combine and season with salt and pepper. Add the chicken and their juices back to the pan.  Cover and bake 35-40 minutes.
