CUSTARD JELLY DELIGHT RECIPE

FULL RECIPE

Ingredients to make custard:

  • Eggs: 2
  • Sugar: ¼ cup
  • Cornstarch: 1 tbsp
  • Flour (Maida): 1 tbsp
  • Milk: 2 cups (500 ml)
  • Fresh cream: ½ cup
  • Sugar (for milk): ¼ cup
  • Vanilla essence: ½ tsp
  • Some fruit to add in custard
  • Apple (chopped): 2-3 tbsp
  • Banana (sliced): 2-3 tbsp
  • Pear (chopped): 2-3 tbsp
  • Peach (chopped): 2-3 tbsp
  • Green grapes: 2 tbsp
  • Black grapes: 2 tbsp
  • Cherries for decoration on top

Ingredients to make Jelly:

  • Red Jelly (strawberry flavor): 1 sachet (80 gm)
  • Green jelly (banana flavor): 1 sachet (80 gm)
  • Water as required (1 and 1/4 cups) for each sachet

Biscuit crumble for base

  • Biscuit (12 pieces): 80 gm
  • Butter (melted): 2 tbsp

Nuts required

  • Walnuts (chopped): 3 tbsp
  • Almonds (chopped): 3 tbsp
  • Pistachio (chopped): 3 tbsp

Ingredients for cream topping:

  • All-purpose cream: ½ cup (130 gm)
  • Powdered sugar: 1 tsp
  • Corn starch: 1 tsp
  • Butter: 1 tsp

Instructions:

  1. Add eggs, sugar, corn starch and maida (flour) in a mixing bowl. Mix thoroughly and set aside.
  2. Combine milk and cream in a saucepan.
  3. Add sugar and bring to a boil.
  4. Turn off the heat and add about half cup of milk in the egg mixture.
  5. Whisk together and add in it the remaining milk.
  6. Add the vanilla essence.
  7. Whisk and cook for about 5-6 minutes until smooth and creamy consistency.
  8. Let the custard cool completely.
  9. Prepare both jelly flavors separately.
  10. Add water in a small saucepan.
  11. Empty the jelly sachet in warm water and mix thoroughly.
  12. Simmer for 5 minutes and bring to a boil.
  13. Turn off the heat and stir until jelly dissolves.
  14. Note: Do not overcook once the jelly becomes clear in color or it will not set properly.
  15. Pour the jellies separately in deep plates and leave them to set.
  16. Crush biscuits into crumbs and transfer in a bowl.
  17.  Add melted butter, mix, and set aside.
  18. Finely chop nuts, combine, and set aside.
  19. When the custard cools completely whisk for a few minutes for smooth consistency.
  20. Add fruit and stir to combine, set aside.
  21. Slightly scramble jelly with fork for easy pouring over the dessert.
  22. To make the cream topping add cream, sugar, cornstarch, and butter in a mixing bowl.
  23. Using a hand whisker or electric beater whisk for 6-8 minutes until thick and fluffy.
  24. Transfer in a piping bag and store in the refrigerator for later use.
  25. Take 4-5 wide serving glasses or cups.
  26. Place about 2 and 1/2 tbsp of biscuit crumble mixture in each glass. Press to firm.
  27. Pour about 3 tbsp of prepared custard over the biscuit base.
  28. Pour 2 tbsp of red jelly over the custard.
  29. Place 1 and ½ tbsp nuts over the jelly.
  30. Now pour 2 tbsp green jelly over the nuts.
  31. Repeat the custard layer.
  32. Place both jelly flavors over the custard evenly.
  33. Place nuts in top.
  34. Finally decorate with cream and cherries on top of each dessert cup.
