If you are looking for a recipe to use cornmeal from your pantry then try this easy cornbread recipe.  It has butter, buttermilk, corn, and whips up in minutes.  It’s good for breakfast, snacks or with dinner.

1 cup medium grind cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

2 teaspoons baking powder

3/4 teaspoon salt

1 cup frozen corn

1 cup buttermilk

1/3 cup melted butter

1 egg, slightly beaten

Directions:

Line an 8×8 inch square pan with parchment paper.  

Heat oven to 350 F.

In a small bowl, combine the cornmeal, flour, sugar, baking powder, salt, and frozen corn. Mix together.

In a small bowl, whisk together the buttermilk, melted butter, and egg.  

Pour the wet mixture into the dry ingredients and stir until just combined.

Bake in oven for 30 minutes or until tester come out clean.
