A delicious healthy blueberry muffin with chia seeds, wheat germ and oats. It’s a muffin to serve for breakfast or send in the kid’s lunch.
These muffins are a great healthy option for busy mornings or a midday snack. Freeze an extra batch ahead of time to always have some on hand.

Makes approximately 12 muffins
1 1/2 cups large oats
1 cup all-purpose flour
2/3 cup white sugar
1/4 cup wheat germ
3 tablespoons chia seeds
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh or frozen blueberries
1/4 cup 1% milk
1/2 cup vegetable oil such as canola or safflower
1 teaspoon vanilla extract
1 cup plain 2% yogurt
Line a muffin tin with paper liners.
In a large bowl, combine all the dry ingredients along with the blueberries and give everything a good stir.
