BJ Brinker's Home Cooking: Raspberry Cheesecake Cookies


These taste similar to the ones sold at subway.   

RASPBERRY CHEESECAKE COOKIE

(makes 3 dozen)

Ingredients:

*1 1/4 cup all-purpose flour

*1 tablespoon baking powder

*1/4 teaspoon salt

*1/2 cup butter, softened

*1/2 cup light brown sugar

*1/4 cup granulated sugar

*1 (3.4 ounce) instant cheesecake pudding mix

*1 teaspoon vanilla extract

*2 large eggs

*1 cup white chocolate chips

*1/4-1/3 cup raspberry jam

Directions:

~In a medium bowl, sift flour, salt, and baking powder together.

~In a large mixing bowl, mix butter , granulated sugar, and brown sugar together, until creamy.

~Mix in vanilla and eggs until just mixed.

~Mix in cheesecake pudding mix until well mixed.

~Mix dry ingredients into the wet ingredients until just combined.

~Fold in white chocolate chips.

~Cover bowl with plastic wrap and chill for at least 1 hour.

~Preheat oven to 350 degrees.

~Spray cookie sheet with cooing spray.

~Put a piece of wax paper on counter.

~Scoop dough onto wax paper (about 1 1/2 tablespoons each).

~Flatten dough with spoon or hand.

~Place about 1/4 teaspoon of jam in the center of the dough and then spread it around.

~Roll dough into a ball.

~Place on prepared cookie sheet.

~Bake for 10-12 minutes or until edges of cookie are a golden brown.

~Cool on cookie sheet for 1-2 minutes.

~Remove and place on cooling rack until cooled.
